Fiesta Buttermilk Cornbread
This delicious cornbread is flecked with colourful green onions, red pepper, corn kernels, and even fresh chillies and makes a great accompaniment to a plate of fried eggs and bacon.
75 g (3 oz) unsalted butter
125 g (4 oz) cornmeal (maize flour)
125 g (4 oz) plain flour
11/2 tsp baking powder
1⁄2 tsp bicarbonate of soda
2 tbsp caster sugar
1⁄2 tsp crumbled sage or dried oregano
2 eggs
250 ml (8 fl oz) buttermilk
2–3 spring onions, finely chopped
1 small red pepper, seeded and chopped
150 g (5 oz) fresh, frozen (thawed) or canned corn kernels, drained
1 small green chilli, seeded and chopped (or to taste)
Preheat the oven to 200°C (400°F/gas mark 6).
Put the butter in a 23-cm (9-inch) black iron skillet or heavy cake tin and place on the middle rack of the oven until the butter is melted. Keep tin warm. In a large bowl, stir together the cornmeal, flour, baking powder, bicarbonate of soda, sugar and sage or oregano, and make a well in the centre.
In a small bowl using a fork, beat the eggs with the buttermilk until well blended. Pour into the well, add all but 2 tablespoons of the melted butter from the tin, and stir lightly until combined. Fold in the onions, pepper, corn kernels and chilli, until just blended.
Pour batter into the hot tin and spread evenly. Bake until risen and golden, and a cake tester inserted into the centre comes out with just a few crumbs attached, about 30 minutes. (Do not overbake or cornbread will be dry.) Remove to a wire rack and cool in the tin, 5–10 minutes. Serve hot or warm from the tin with lots of butter.

I was looking for some ideas to make for when I have family over for a special brunch. Most of the recipes in this book were so disappointingly basic - I mean, who needs a recipe for just cutting up fruit to make a fruit salad? And I agree with Jessica's review, the photos actually made you NOT want to make it. I've been a member for over 15 years, and it's the first book I've forced myself to return, it was that bad.

This book was very disappointing. I expected to maybe learn something new and didn't. Some of the photos aren't very appetizing and make the finish product look bad.
